Quick Asian Rice Noodle Salad
INGREDIENTS
1 Package Asian Brown Rice Noodles
1/4 cup Low Sodium Soy Sauce (tamari or coconut aminow if gluten free)
1 tbs Rice Vinegar
2 tbs Lime Juice
2 tsps Honey
2 tsps Toasted Sesame Oil
1 tbs Fresh Ginger (fresh, minced)
1 Clove Garlic (minced)
3/4 cup Cashews (salted, dry roasted, can sub peanuts)
2 1/2 cups Coleslaw Mix
1/8 tsp Red Pepper Flakes
3/4 cup Cilantro (chopped)
INSTRUCTIONS
Cook noodles according to package directions. Drain and transfer to a large bowl to cool. Cut noodles up a bit with kitchen shears or a knife to make them easier to toss.
Whisk together soy sauce, vinegar, lime juice, honey, sesame oil, ginger, and garlic in a small bowl.
