Monster Breakfast Cookies
- 2 bananas
- 2 eggs
- 1 large shredded carrot
- 1/2 cup almond butter
- 2 Tbsp butter, softened
- 2 Tbsp maple syrup
- 1/2 cup organic sprouted oats
- 1 cup almond flour
- 1/2 tsp sea salt
- 1/4 cup sprouted raw pumpkin seeds
- 1/3 cup unsweetened dried cranberries
- 1 tsp cinnamon
- 1 Tbsp ground flax seed
Instructions:
- Preheata oven to 350F.
- In a mediuiim mixing bowl, combine mashed banana, eggs, carrot, almond butter, butter and maple syrup. Mix well.
- In a large bowl, mix together oats, almond flour, salt, poumoplin seeds, flax seeds, cinnamon, cranberries and chocolate chips.
- Combine wet ingredients into dry ingredients and mix well. Form dough into large flattened cookies and place on a parchment lined cookie sheet.
- Bake in oven for 25-30 minutes until cookies are golden brown.
- Let cool completely.
- store in refrigerator.
