Quick Asian Rice Noodle Salad

INGREDIENTS

  • 1 Package Asian Brown Rice Noodles
  • 1/4 cup Low Sodium Soy Sauce (tamari or coconut aminow if gluten free)
  • 1 tbs Rice Vinegar
  • 2 tbs Lime Juice
  • 2 tsps Honey
  • 2 tsps Toasted Sesame Oil
  • 1 tbs Fresh Ginger (fresh, minced)
  • 1 Clove Garlic (minced)
  • 3/4 cup Cashews (salted, dry roasted, can sub peanuts)
  • 2 1/2 cups Coleslaw Mix
  • 1/8 tsp Red Pepper Flakes
  • 3/4 cup Cilantro (chopped)

INSTRUCTIONS

  1. Cook noodles according to package directions. Drain and transfer to a large bowl to cool. Cut noodles up a bit with kitchen shears or a knife to make them easier to toss.
  1. Whisk together soy sauce, vinegar, lime juice, honey, sesame oil, ginger, and garlic in a small bowl.
