Combine whiskey or bourbon, lemon juice, maple syrup, aquafaba and bitters in a shaker. Shake for 20 seconds. This is a dry shake.
Add ice cubes and shake again for 20 seconds. This is considered a wet shake.
Pour into the chilled glass by double straining. Wait for the foam to settle before garnishing.
Use a peeler to peel a thick layer of lemon and rub the oils around rim of glass. Place peel in glass with a cinnamon stick and sprinkle with cinnamon if desired.
