7 Layer Mediterranean Hummus Board
Ingredients:
- 3 cups hummus, homemade or store-bought
- 2 cupsĀ organic Greek yogurt
- 1/2 cup sheep’s milk feta cheese
- 1/2 thinly sliced small red onion
- 1/2 cup halved Kalamata olives
- 1 cup halved organic cherry tomatoes
- 1 english cucumber chopped
- 3 Tbsp lemon juice
- 2 Tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- fresh mint leaves
- 5 cloves chopped garlic
- 2 Tbsp chopped fresh dill
- salt and pepper
- Optional: pita bread, crackers, red bell pepper strips, lemon wedges
Instructions:
- Spread hummus on a wooden or marble board.
- In a small bowl mix yogurt, chopped garlic, dill, and a pinch each of salt and pepper.
- Spread yogurt on top of the hummus.
- In a medium bowl combine cucumber, tomato, lemon juice, onion, half the oregano, and garlic powder. Arrange on top of the yogurt.
- Arrange feta and olives. Sprinkle remaining oregano and mint leaves.
- Serve with pita, crackers, lemon wedges or any other vegetables to dip with.
